Easy Sage Focaccia Bread

1 pound flour (3 cups) - - I use spelt flour
1 tsp. baking powder
½ tsp. salt, optional
1 cup plain yogurt
1 stick butter, melted (could do olive oil or coconut oil)
2 eggs, beaten
3 TBL chopped fresh sage
4 oz. aged cheddar or blue cheese, crumbled (any aged hard cheese works)
 
1.       Sift flour, baking powder and salt together. Form a well in the center.
2.       Mix yogurt, butter, eggs and sage together.
3.       Pour liquid mixture into well and stir together until blended.
4.       Place on wax paper and lightly knead into a ball.   (Best to oil the wax paper so that the bread doesn’t stick.
5.       Roll out on a pizza paddle (sprinkled with coarse corn meal ) or onto an oiled cookie sheet. Roll out to a 12” round.
6.       Bake at 350 degrees for 20 minutes.
7.       Remove and crumble the cheese on top. Bake for another 10 minutes.
8.        Remove and let cool. Cut with a pizza cutter.
9.       Serve with an awesome salad.
No yeast, no sugar. Simple and very tasty with a green salad.
