Carrot Salad

A fresh, easy and tasty carrot salad. It keeps well in the fridge. I make extra and enjoy it for several days!
1 apple grated
2 c. grated carrots
¼ c. pecans, toasted, and chopped
½ c. dried currants or raisins (I soak them in the orange juice while grating the carrot and apple)
Lemon zest
1 TBL lemon juice
½ c. orange juice, fresh if possible
1 – 1 ½ tsp. cinnamon
½ tsp. sea salt, optional
 
Combine all ingredients. Chill and serve! 
Serves 4
