Organic eggs and veggies are full of excellent nutrition and easy on a budget! Finding a great recipe that allows you to customize and experiment is a bonus. One of my favorite recipes is Frittata, which is so easy that you can’t do it wrong! You can customize and experiment with different ingredients and variations like:
- Make with or without cheese
- Vary the veggies
- Vary the herb
- Vary the spices
- Vary the liquid
Frittata is tasty either hot, at room temperature, or even cold. It is excellent for camping, brunch, or even dinner.
What is my favorite Frittata recipe?
EASY Frittata
Ingredients
- 6-10 Eggs
- 1/2 c Cheese (optional variations: goat cheese, manchego, mozzarella, feta)
- 4-6 c Sliced Veggies (Some you could use: Spinach, Onion, Yellow Squash, Zucchini, Asparagus, Broccoli, Tomatoes, Green Onion, Mushrooms, Sweet Potatoes, Arugula, Carrots)
- 3 TBL Liquid (water, cream, or coconut milk)
- 1-2 TBL Herbs/Spices (Some you could use: Basil, Oregano, Parsley, Cilantro, Chives, Rosemary, Coriander, Cumin, Dill, Garlic, Turmeric)
- Salt and/or Ground Green Peppercorn to taste
- 2 TBL Olive Oil or Coconut Oil
Directions
- Preheat oven to 350 degrees.
- Use a 12″ oven-safe skillet to saute veggies with olive or coconut oil over medium heat until tender.
- Season veggies with salt, herbs, and green peppercorn
- In a separate bowl, mix eggs and liquid of choice.
- Pour the egg mixture into the skillet and cook on medium heat for 2 minutes. Lift the veggies so the eggs reach the bottom of the pan.
- Remove from heat and sprinkle with cheese (optional).
- Place the pan in the oven until the eggs are fully cooked and the cheese is melted – about 10-15 minutes.
**If you do not have an oven-safe pan, you can transfer your veggies and egg mixture into any oven-safe dish to bake**
