Grain Free / Flour Free Almond Bread:
I use this ‘bread’ for so many other fun recipes, from grilled cheese (in the picture) to french toast and more!
- 1 cup almond butter
- 3 large eggs
- 1 Tbls vinegar
- 1/2 tsp baking soda
- 1/4 tsp salt
There really is no flour in this recipe!
Mix (I used a hand mixer).
Bake in parchment paper lined loaf pan at 350 for 22- 25 minutes. Let cool before slicing.
Options: You could add some seeds, and/or chopped nuts.

I have been looking for a gluten-free bread for some time now, and always found recipes that advertise “no flour”, but always call for expensive alternatives such as almond flour, rice flour, coconut flour, and they all have xanthan gum or other binding agents that I never have room for in the budget.
My friend sent me this recipe this morning, and I didn’t hesitate to try it out! I only had peanut butter available, and just ran out of vinegar yesterday, but I was determined to give it a try! I used lemon juice in place of the vinegar, and cooked it for 30 minutes, and it is simply incredible!! I am going shopping tomorrow and can’t wait to try it with almond butter and vinegar!
We are going to attempt making sandwiches for lunch with this, and I have no doubt that it will work wonderfully! It holds together so well, and my 5 year old girls are begging me for more!

Do you have any breads that are gluten free dairy free and no rice flour in them? I have a friend that has a son that found out he is allergic to those things. Very hard to find things that don’t have eggs and rice flour in?
I have many without grains and dairy, however they do have eggs. That is a tougher one to omit. Praying you find one!
Can this be made in a microwave oven? We do not have air in the hot Florida summer so I do a lot of baking in my microwave. Thanks for your help.
Thanks for you post Terry. I don’t use a microwave for any of my baking, so unfortunately I can’t give you a good answer on this. My initial thought is that it wouldn’t work, but you would have to experiement and see what happens. If you do, please let us know your results – I’m sure others would be interested. It’s a wonderful and easy recipe so I hope you find a way to bake it that works for you.
Can you use Regular butter in place of Almond butter?
no – you would want to use another nut butter such as peanut butter.
