Do you love pudding? Want it without a bunch of carbs, sugar, or even avocado? Looking for easy ways to add protein to your diet?

Many people want to lose weight and yet want something creamy, tasty, and easy to make. These pudding recipes fit the bill! They have no dairy, nuts, or avocado.

They are luscious, tasty, easy, and require only a blender and a few ingredients.

 

Chocolate Pudding

Ingredients

  • 8-9 hard-cooked eggs, chilled (yes, hard-cooked!)
  • One can of full-fat coconut milk
  • 4 TBL cocoa or cacao powder
  • 1/3 cup Monk Fruit or favorite sweetener to taste
  • Pinch of salt (brightens the flavor – – not too much)

Instructions

  1. Put all ingredients in a high-powered blender. I use our Vita-Mix.
  2. Blend until totally smooth.
  3. Chill for at least an hour to blend flavors.

Surprisingly, no ‘egg’ flavor!

 

Pink Berry Chia Pudding

Ingredients

  • One can full-fat coconut milk
  • 1 tsp vanilla
  • 1/4 cup Monk Fruit or favorite sweetener to taste
  • 1 – 10 oz. package strawberries or raspberries, thawed
  • 1/2 cup chia seeds

 Instructions

  1. Mix coconut milk, vanilla, and sweetener in a blender until smooth.I use our Vita-Mix. Add berries and pulse just until blended. 
  2. Stir in chia seeds.
  3. Pour into a quart jar (or individual-size containers) to store in the refrigerator. Let set for 6 hours or overnight. It is good for three days.
  4. Garnish with more berries and whipped cream (dairy or coconut), or enjoy plain!

Fluffy and light – such a delight! And it is EASY to make! Experiment with other berries.
