This was a hit at both my birthday party celebration and at several events I’ve taken it to – a wonderful way to celebrate and enjoy fresh summer strawberries!
- 4 oz softened cream cheese **
- 2 cups of heavy whipping cream **
- 3/8 cup of sweetener, powdered (Monk Fruit, Swerve or erythritol)
- less healthy option would be confectioners or powdered sugar
- 4 Tbls of fruit only jam (strawberry preserves)
- zest from 1/2 a lemon
- 2 tsp. fresh lemon juice
- 1 tsp. vanilla extract
- about 8 graham crackers (you can find gluten free)
- 1 pound strawberries – trimmed and sliced
** To make it dairy free, use a dairy-free cream cheese and canned coconut milk
- Put the cream cheese in a large bowl and beat with an electric mixer until soft.
- Add in the cream, sweetener, jam, juice, zest and anilla. Beat until stiff peaks form.
- This may take a bit of time depending on the type of mixer you use.
- Layer the crackers in the bottom of a 7″x11″ pan/serving dish (select one that will look nice when you serve it).
- This recipe will make either 2 or 3 layers, based on how thick you make each layer and how deep your dish is.
- Spoon on the cream mixture and then a layer of sliced strawberries
- Repeat the layering process 2-3 times unit your cream mixture is used.
- Crackers, Cream Mix, Sliced Strawberries
- Cover with plastic wrap
- Chill for at least 5 hours or overnight – this lets the crackers soften.
