Love ice cream? Think you can’t have it?

Let’s change that story!

I have two incredible ice cream recipes that bring everyone back to their childhood of eating ice cream on a hot summer day! One uses organic dairy, and the other uses organic dairy-free ingredients. Both ice creams are homemade, and you can use your favorite sweetener.

Whether you follow paleo, keto, or low-carb diets or just love ice cream, have fun eating the food your body loves!

Organic Ice Cream
3 c. – organic cream
1/3 – 1/2 c. – organic sweetener (your favorite )
1 – organic egg
1 tsp – organic vanilla
Mix well and freeze in the ice cream maker according to the manufacturer’s directions.

Organic Dairy-Free Ice Cream
1 can – organic coconut milk, full-fat
2 small cans – organic coconut cream
1/3-1/2 c. – organic sweetener
2 – organic egg yolks (or one egg)
1 tsp – organic vanilla
Mix well and freeze in the ice cream maker according to the manufacturer’s directions.

Note on cream: We find that dairy from grass-fed cows often digests better for people who have problems with dairy products. We’ve also discovered that there are now dairy products that are labeled A-2. These come from cows that produce only natural A2 protein and no A1 protein. Forest, who has problems with dairy products, finds that he does much better on A2 cream!  And that’s a win!!  It does cost a bit more, but you’ll be supporting small, local dairy farmers who are producing a much healthier product. Many health food stores are starting to carry it – it’s worth looking for!  If you have dairy allergies, you still need to proceed with caution. Curious?
