Unwrapped Egg Roll
Great Instant Pot Recipe or you could do in a large skillet or pan on the stove-top.
- 1# ground turkey
- 2 TBL olive oil (I used a mix of Garlic and Hojiblanca flavored oils from Health Essentials*)
- 3-5 cloves garlic, minced
- 2 tsp minced ginger
- 3 green onions, sliced (white and light green parts)
- 2 broccoli stalks, grated or shredded
- 4 c. cabbage, shredded (about 1#)**
- 1 small can water chestnuts, chopped (optional)
- Bib Lettuce for serving
Sauce Option 1:
- ⅓ c. tamari (wheat-free) or Bragg’s Amino or Coconut Amino acids
- A mix of Coconut Balsamic Vinegar and Lemongrass Balsamic Vinegar (to taste)
- ½ tsp Trinidad Seasoning from Spice House (or a lemon, garlic, ginger blend)
- ½ tsp green peppercorn, ground
Mix all ingredients and set aside.
Sauce Option 2:
- ½ c. canned coconut milk (be sure you blend before measuring)
- 1 TBL Bragg’s Amino or tamari or coconut Amino acids
- ½ – 1 tsp Spice House’s Lake Shore Drive Seasoning*** (or Foxpoint)
- ¼ – ½ tsp ground ginger
- Hot sauce, optional
Mix all ingredients and set aside.
- Using the Sauté Setting on the Instant pot, heat pan. Add olive oil. When it is hot, add the ground meat. Cook for about two minutes.
- Add the fresh ginger and garlic. Sauté until browned.
- Add in green onion and stir.
- Add in ¾ of the cabbage, all of the broccoli and water chestnuts (if using). Add in ½ of sauce (whichever you choose).
- Close the Instant Pot lid and cook on Manual/high pressure for 1 minute. When beep sounds, carefully do a quick release.
- Remove the Instant Pot lid, select Saute and add remainder of sauce and cabbage. Cook just until mixed and heated through.
- Serve in a Bibb lettuce leaf.
* We love Health Essentials for flavored olive oils and vinegar. Great price and selection! You can find information on them in the Resources Section of the website.
** If you don’t tolerate cabbage, consider a mix of jicama and carrots
*** Spice House is our preferred seasoning company for flavor, value and friendliness. You can find information on them in the Resources Section of the website.
Option: No Instant Pot?
- You can make this stove-top using a large skillet or pot. Just cook a bit longer – until the meat is totally cooked.
